SCD Insiders, Loyalist and Members...

Our second Annual Valentines Event is about to commence. Have you figured out what your doing with your loved ones, friends and enemys?
St. Valentines and its ceremony and meaning, has such a diverse place in everyones life. Passion, Fire, Love... Loves found, loves lost, and unrequited love. This week has effect on us all, sometimes amazing, sometimes fantastic, sometimes difficult or melancholy. Which is it for you? I wish you all passion.

You know we work hard at creating unique experiences in dining for you. This will be no exception. To be terribly honest, we've turned the evening all unto our own. A place for everyone, thats centered around food, service and best of all a place to relax, to let go of expectations and enjoy the moment. This evening as all are not exclusive to couples.

Bloody Valentines: the Romans had a mid-February custom where boys drew girls' names in honor of the sex and fertility goddess, Februata Juno; pastors "baptised" this holiday, like some others, by substituting the names of saints such as Valentine to suppress the practice. Others maintain that the custom of sending Valentines on 14 February stems from the belief that birds begin to pair on that date. By 1477 the English associated lovers with the feast of Valentine because on that day "every bird chooses him a mate." The custom started of men and women writing love letters to their Valentine on this day. Other "romance" traditions have become attached to this feast, including pinning bay leaves to your pillow on Valentine's Eve so that you will see your future mate that night in your dreams.
 

We're going to celebrate with our annual feast of  aphrodisiac cuisine, loosening libations, and soulatious desserts to get your mojo following for the coming night and weekend. Even if you don't have a partner to attended with, solo artist have always been welcome! Our Alter is going up next week, so don't forget to bring an offering!!!

It's been a very exciting few days for us here. A lot has begun to change in 08... Fair warning... If your still sitting on the log and thinking when it might be a good time, now is the time.

Unoffically, I'll tell ya a secret... SCD in it's current form is preparing the cocoon of evolution. Enough misdirective blahblahblah, you'll all find out soon enough...

SubCulture Dining Faithful, Insiders and Friends,

As of Friday, January 18th at 3:42pm, my life and the life of my partners and crew has been set on a new course.


    It shouldn’t really be to anyone’s surprise; it was destined to happen and only a matter of time. I am returning to the open - back above ground, back to the bricks and mortar restaurant scene in San Francisco!!! Without going into a long drawn out story (cause, then I wouldn’t have anything to say in the blog, ha-ha..), the countdown to change has begun.

    Know that I love what we’ve done with SubCulture Dining; however, it’s never been a secret that my motivation has always been to build my bricks and mortar.  With that said, we’ve created something extraordinary with SCD (attempting to be modest here); we’ve changed the scope of underground dining in the city.  I hope we’ve raised the bar.  Now it’s time to do it above ground. We’ll run SCD as long as we can, and I’ve been considering its evolution. Know that it will not disappear; it will evolve and become something more fabulous.


    So, as I’ve said in the past, “it takes a village”… I’m looking to the village we’ve created to assist us in the next step and join us in this adventure.

We’re announcing today the creation of “Founders Club”…

    Founders Club is a dinner party and membership event hosted and held at one of SubCulture Dining’s Underground lairs on February 29th, 2008 and March 7th, 2008.

    Holding this special event will help us with handling the already pressing needs for the materials and legal work that we need to formalize and finalize our preparations for our official offering.


    Founders Club members, in addition to joining us for one of the incredible SCD hosted dinner events, will receive a exclusive numbered membership card, be given the opportunity to join us for one of the menu tasting events, priority invitations to the “(project NoCa)*” opening cocktail party, a special website exclusive to Founders Club members for videos, pictures, updated info and blog on our building process, and a few yet to be disclosed perks and surprises!!!

Hello All,
and a belated Happy New Year...

We'll we're revving things up for a great start to the new year and some great new tweaks to our offerings for 08.

To start,
Our current schedule for the next 3 months has been posted to our Google Calendar !
We're back up and running for our first event this coming weekend! And the following weekend the entire dinner will be centered on Eggs from Petaluma Farms... Some great events planned for February, including our annual Bloody Valentines Event and Partners in Cuisine 7 (more on that in a sec), and last but not least, March dates with feature PIC 8 to start out, and PIC 9 "Super Secret Supper" Event to finish up!

Speaking of our PIC events.
We've found the PIC events to be some of the more popular of all of our regular creative events. We're trying to raise the bar for ourselves this year...
Each of the PIC events will now feature not 1, but 2 our our favorite vendors / partners in cuisine!
PIC 7 we're happy to announce will feature Golden Gate Meat Company and Boriana Foods, both of San Francisco's Ferry Plaza! How exciting. We've worked with GGM for quite some time and love their products and have successfully cohosted last year with Boriana for PIC #3. This just seemed like a match in culinary heaven! Just think of the implications!!!! oooooohhhhhh.....

Hello All...
Loyalist, Members and Insiders...

I'm sending off this email with a special request for your help.
As some of you know and as many of you don't know yet. I've been selected by the
CUESA  Organization (Center for Urban Education and Sustainable Agriculture) to participate in their yearly fund raiser, the infamous "Sunday Supper" Event at the San Francisco Ferry Plaza Marketplace. Sunday, September 30th, 2007.

A quick note about CUESA.
CUESA was organized in 1994 to educate urban consumers about sustainable agriculture and to create links between urban dwellers and the farmers who practice sustainable agriculture in the Bay Area. CUESA is dedicated to promoting a sustainable food system through the operation of the Ferry Plaza Farmers Market and its educational programs. Personally without CUESA we simply would have a difficult time procuring  what we primarily use in the restaurant and creating the relationships and direct communications with the farmers to produce the artisian heirlooms and amazing seasonal and local products that is part of the high standards of our work. Simply put, we would not thrive without CUESA's support.

This is a great honor for us to be able to participate at this important event. But, we need your help! SCD is a movement of survival for our B&M program, being the only "Underground" to participate, in itself an honor, creates a unique problem. All of the other participants have funding and deep pockets to be able to cover the cost for equipment and food, we on the other hand do not (this too shall change one day soon). Here's where you come in. We've created a goal budget of $5000.00 to cover our cost for equipment and supplies for the Event, our deadline is set for the 15th of September. All monies raised (over or under our goal) and not used for the direct related cost will be donated directly to CUESA. Of course myself, Squeez, EV and my Corsair staff will be all donating our time and efforts to the event and organization.

Never say I won't...
As an incentive, becuase it always make good sense.. For everyone that donates a minimum of $100.00, you will receive one of the new T-shirts that we're currently designing (hopefully to be in our hot little hands prior to the end of September). July 27th- 28th... Still drumming the insanity for this one!

August 10th-12th: At the peak of Summer! This event will be a Summer Vegetable and Fruit heavy event!

August 24th-25th Partners In Cuisine No. 5 featuring J. Lohr Vineyards: Need we say More???

Early September will bring our first DC Harvest Dinner event (yeah, we started growing our own garden!, pictures will be on our Flickr page soon! Thanks Flatland Flower Farm!) Also, DC will be making an appearance at the CUESA Sunday Supper Event (more details to follow on that!, keep checking the site!)

Spring is in Full Effect in San Francisco!!! For any of you that visited the Market this week, you as well as the lucky 30 diners this past weekend know. Spring is moving quickly into Summer. With the light winter, we've been given an incredible bounty of early Summer harvest. Squashes, Stone Fruits and the like are all appearing in the market and lucky for us/ you we're cooking it up... aahhh yum....

This time we're paring with Vine Robles Winery (http://www.vinarobles.com/index.php) of Paso Robles. A wonderful winery founded in 1996 thats producing some wonderful wines that we will be paring an amazing menu too. Jeff Chandler of Vina Robles will be on hand to speak about the winery and their philosophies. If you've ever been to one of our past PIC events, you know these are a must on your culinary events calendar!

Fathers weekend is also a wonderful evening that we'll be preparing for. Bring your Dad as a treat or duck him and come and relax with us anyway... June 15th-16th

Bastille Day is coming.. Bastille Day is coming..  Need I say more.. July 13th-14th... Many surprises are in store... Poetry, fabulous wines, and a lot of French Food. Country French on Friday, Parisian on Saturday.. oh la la...

We've got a great menu planned with exceptional products brought in from Montepulciano Italy by Boriana of the Ferry Plaza and the best local ingredients our farmers and vendors have procured for us. Don't miss this amazing opportunity to dine, drink and be educated on a fabulous region of Tuscany with out having to make the trip across the pond... Wow,

Loyalist, Here we are... 1 year old.. Fussy, testy, and still growing... Well, that calls for some good food, yea-huh! That will make it all better.... We're celebrating this week with a few special guest, some great food, fabulous libations and a very intimate setting.

Spring has set upon us and the market is rapidly changing. I'm excited about what we're about to start offering and the changes the season will bring. Ahhhh spring...

So what's in store for us in the coming year? We're still working hard on our primary goal (PNSF), TV seems to be in the works still, Book is on the burner, but first and foremost we're here to make wonderful food for you. So, how can we be of service, what would you like to see us do this year?.. Tell us... The blog will be up and running later this week. so please chime in. Let us know what we can do to make your culinary dreams come true... or better yet, come join us soon, or gather a group of friends and try our DWC program...

We've changed our dates for the Boriana "Partners in Cuisine" event to April 20th -22nd. A Montepulciana, Tuscany inspired dinner with products from our favored vendor "Boriana" of San Francisco's Ferry Plaza... 40 seats per evening in one of our favorite secret locations... Ask anyone that's been to one of our amazing "PIC" events.. This is a meal that you will talk about for years. no really..

The crew and DC have been working to improve the site. We've reworked the Reservations page and system to make it easier for you to book space and to quickly confirm you space.

I've been plunking away and making upgrades to the site.. Significant changes you'll notice.
New Google Calendar for our dates, not only now can you see our operations dates easier, you have the opportunity to subscribe to our
Google Cal and get the automatic updates on your GCal as I add or change dates. Direct links to special events and reservations links for events will be added in to simplify your ability to stay up to date with us.
New Insider Login Page, if you've dined with us and are part of the "SCDInsiders" group, you will have access to a special section (yes, just for you... dining does have privileges) that will have a list of all our upcoming dates, discounts, information  and direct vetted reservations links, oh so convenient)... Watch for the "Insider mail" with the login info a little later...

SCD is once again changing it up to keep you on your toes, evolve and improve the experience for YOU, our fabulous and supportive patrons...

We've added some great new members to our staff of Rogues (LuLu, BBoy, MattDaymon, more to come..), continuing to make upgrades to our website and reservations system, and best of all new secret locations!!! Keep your eyes open for the changes to occur..

Dates CHANGE UPDATE!
We felt that it just wasn't enough time to properly prepare for the Niman Event and get the Hog, Lamb, and Cow (no, I haven't named them yet) we wanted. So, fortunate for you and for us.. The date has been rescheduled for February 23rd thru the 25th. Not sure what part of town yet (still looking for hosting locations!!!), but here's the link to the event. NIMAN .
Both Julie Nutter and Matt Drayton of Niman Ranch will be joining us each evening to pontificate about the tasty beast and Nimans "Raised with Care" Creedo... (our new motto, "We love Vegetarians, Cows and Pigs are vegans!)
Many details to follow, but seating will go fast, and if it's anything like our Truffle night, Look OUT..

Dinner this Week..
So much food to cook and just not enough mouths to feed.. I've got some amazing dishes I'm dreaming up this week, in addition to repeating one I fell in love with last week (Boriana Wheat Pasta with saute of wild chicories, poached farmers egg with Anchovy Sauce), and I've got a Sous Vide of Lamb Shoulder, stuffed with Trotter and Black Truffles. OH..

Welcome to 2007.  I'm going to attempt to keep this brief and sharp this week. There's lot to share.

The site has some new updates, feel and look. I'll be adding more as ususal, sort of. Keep checking back.. Its hard for me to leave it alone.

The coming week is our last in the fabulous Dolores Park area, maybe for quite awhile. I suggest you come and see what all the fuss has been about. We'll miss our home there Gecko! thanks for hosting. With that said. We are looking for new locations currently. If you know of anyone that may have a space for us to "invade", let us know... Many perks and wonderful surprises come to those that share! you can always email me here pirate@thescdsf.com . (Basic requirements: City of San Francisco area, can seat possibly 12-20 people, 3 days of operation, gas kitchen equipment)

Well,
the clock is ticking on the fatmans flight. Have ya been good, or (how we like it) bad... so very bad???

Just wanted to send out a last minute reminder that Truffles are enroute to the SCD kitchen for me to make yum-yum for the lucky 36 diners this Thursday and Friday evening.. I've got just a couple of seats available for Thursday evening and roughly twice as many left for Friday night. These will not last long, Daily Candy is doing a email blast to their enormous following tomorrow, which I've been made assured will create quite a buzz. Ugh.. Insanity... We've got seats also left for the New Years event... Those will more than likely follow suit with the truffle night seats.. So, your on the inside.. MOVE it.. or GO Hungry...

So,
I'm not going to blah blah about what tasties I've got in store for this weeks event.. but to say the least.. OH My... someones gonna hurt.. and I'm probably going to be Truffle Funky for at least a week.. Ummmm Smells like.... douh.....

Well, working out of the new location in Cow Hollow has been fun. Ronin has taken on the task of keeping tracking of our nightly menus, so that means that they will stay up to date. At the time I'm writing this note (Tuesday, 6pm), we've got just a few seats left for Saturday evening, and good seating left for both Friday and Sunday evening..

Well, Turkey day past, we look forward to the holidays (fill in your choice, here)…

 I’ll get right too it today… 

We’re in our fabulous new location this week in CowHollow; seats are moving and seating limited in this location, so move… We’ve seemed be getting bookings well in advance of a month at this point, so gather your troops or not, but book your space, cause we can see the writing on the preverbal menu…  

 What’s to eat this week...?  

 Well, the markets in an interesting state I found out this morning... Some early winter favorites, some not quite there yet... I know that I’ll be putting out some tasty Golden Gate Venison again, and of course we’ll be working with Local Crab and I’ve got a line on some live Sea Scallops, think I might do a sauté of Bone Marrow with a nice East Coast Flat oyster… yum... FarWest has some great Porcini’s, Matsutake and Chanterelles on hold for me. So, should be a wonderful bounty to work with.  

 Stuff and the rest of the Blah, Blah… a yeah...  

 We’ve made a few hot plug adjustments to the way we’re providing service now. As mentioned in our communiqué last week (see it here). We’re now doing 3 tier’s of service (Full9, Midi6, Small4) Friday’s and Saturday’s, and Sunday’s are now strictly our 3 Course Sunday D inner service (once again, Thanks Manhattan)…  

 Our Truffle nights ( D ecember 21st and D ecember 22nd) are starting to sell, and seating is really limited to 50 seats each night. I’ll be posting a rough of the menu, sometime within the week…You can book your seats here (Truffles Please… Night 1, Night 2)

As well as…. 

New Years Eve ( D ecember 31st), we’ve got seating available (again, only 50 seats for this event), 9 Course’s of relaxed dining indulgence to bring your new year in…  Book your seats now (Bring it)

With both of these locations we have the ability to have 2 private dining rooms of 12.  

 Last, I announced that we will be offering Holiday Gift Certificates for vetted members. Can you imagine the recipients face when they get our envelope with the Jolly Roger on it? And again, for anyone that donates for 12 full or more. You have the option of spending the day with the Rogues and myself for a day of culinary insanity or personal delivery by D C (yea me) on or before your chosen holiday.  

 Well, off to start getting ready...  just to note, as of 6pm today, space for this Saturday's early seatings have just about sold out....

So, I hope this ping finds you all well and enjoying some great grub. I myself will be hanging with Squeez, catching up on movies and sleep… If you do anything, just remember we’re thankful for you. (That’s some pretty good suck up huh...)

Wow, what a great weekend we had in Noe Valley ... Seems we had a few inspired writers visit, and were impressed and entertained (see if you can find their blogs)... I’ve got to learn to watch for camera’s, seems someone snapped a few while I wasn’t looking, and of course “she” got me with a stupid expression on my face.. Ugh… typical…

 

So, while the crew is getting some well deserved R&R. I’m planning and working on our newest of upgrades and exciting new offerings here at SCD. We’re always trying to make adjustments to offer you the best options and fulfill your dining needs. So here’s what we’re going to do…

1st. Sunday’s…. are now going to become (Thanks to codename: Manhattan ) “3 Course Sundays”… We’ll be serving only the 3 course option on Sunday evenings only! So, like Manhattan, you can now come and dine with us on Saturday for the 9 course and come back on Sunday and relax with the 3 (as Manhattan says: “hey, no dishes, no worries, nice way to finish my week!)

2nd .We’re shifting the dinner tier around here so stick with me…

Friday’s, Saturday’s we’re offering the SCD Full (9-11Course for $120Donation), the SCD Midi (6Course for $80Donation), and the SCD Short (4Course for $65).

We hope this give’s you more options to join us again, and for those of you that haven’t ventured our way, we always suggest starting your journey with the SCD Full…

 

Truffles and NYE 07…

As a few of you have heard already. We’re starting our “Partners in Cuisine” Series with Far West Fungi of the Ferry Plaza this month. Thursday, December 21st and Friday, December 22nd, at 8pm. Guest Host Ian Garrone will be here to speak about all the magnificent truffles and truffle products he’s acquired for us (hopefully up to 12 different types). Seating is limited to 50 each night with 2 private room tables of 12 available. Donations are $135.00US, not including gratuity. Tickets have been selling so move fast. First Come- First Served…

New Years Eve

New years eve is a day I look forward to cooking on all year (still haven’t been able to figure that one out yet, oh this path of discovery). So, since I’m “sort of” back cooking for the public, I want to do what I do, on the day I enjoy it most… I also though it would be great to keep it simple and fun. So, we’re going to do a wonderful 9 course tasting, with a libation pairing, and I’m preplanning the menu. This week once again has us at our new fabulous location in Noe Valley … For those of you that made it, you got to experience a very special space, in addition to the throwdown of some amazing food (yea, I’m tooting my own horn)… Crispy Pork Crepenette in Trotter Broth with Broccoli Romanesco, Leg of Venison with Moroccan Spice and Huckleberry Sauce, Mediterranean Rouget with Matsutake Mushroom and Leeks and Green Tea Nage, Crash made desserts of Duck Fat and HoneyComb Cake with Meyer Lemon and Brown Butter Frosting….

We were able to raise a few bucks for LiveStrong (my warmest thanks to everyone that contributed and or stuffed the box), not nearly enough to our liking, so SCD is going to extend our fund raising for our two Charities through the end of the year... Please help… Links to give our on our “News page”. This week we’ll be featuring Meals on Wheels of San Francisco.

This weeks Chow…

As always I’m still kicking around a lot of ideas about what I’d like to do this weekend… It’s always a funky process and even I am still figuring out how it works. All the same, I do know that I’m going to run another version of the Leg of Venison from Golden Gate Meats, Braised Rick Knoll Cardoons with my Homemade Farmers Cheese. Nettles from Star Route, and of course we are working on acquiring local Crabs, maybe tossed with Truffles and Meyer Lemon? ok, that’s enough punishment.. Oh, can’t forget, Crash is working on a wonderful Persimmon Almond Tart idea, as well as a Carmel Apple type dessert she tried to describe to me late after service the other night….and as always some wicked new Ice Cream Flavor and Cookies… I’m so going to be fat... better get back to 3rd street gym fast…

THE OFFICAL ANNOUNCEMENT SECTION!!!!

We’re going to start a new and interesting program that we think you all might enjoy… We are starting a series of events with our vendors and farmers to do “Partners in Cuisine” nights. These will occur hopefully monthly, starting with December... our fabulous Fungus supplier “FarWest Funghi” of the Ferry Plaza will be working very hard to provide us with a bounty of fresh Truffles from around the world (over 8 countries currently cultivate truffles right now), with this we will be doing a 9 to 12 course menu incorporating truffles or truffle friendly dishes. 50 Seats will only be available. Wines and Pasta’s from Boriana and much, much more. Details (as we discover them) will be posted to a new page on our website.

New Years Eve at S.C.D.  Oh yea, something that I have loved throughout my career is the opportunity to cook on New Years Eve... For some reason I look forward the entire year to that one night of cooking... Not that I don’t love every night I’m fortunate enough to get to fire it up... New Years holds something special to me... This first NYE at SCD we thought we’d keep it simple, lite and comfortable. We’ll be returning to one of our favorite spots in the city, we have 52 seats to fill for one seating of a 9-12 course yum fest.

Currently PreSales are underway (see you’ve got to be an “Insider” to have that privilege) and general sales to our Loyalist will be available starting Tuesday, November 21st.

Adventures in Quantum Dining…

 

As the Dish Turns, whatever you want to call it. Here’s the latest...

 

The Month of Giving has begun…We’re shifting to a new and fabulous location this week in the Upper Mission/ Castro fringe area. Beautiful dining room and great skyboxx seating...  We’ll be supporting two of our favorite Charities this month... this week (November 11th-13th)  its for Lance Armstrongs “LiveStong Foundation” and next week (November 17th-19th)  its for San Francisco’s own “Meals on Wheels”. I’m personally asking that you help by giving anything, a Benjamin, a Lincoln, hell even a Washington will do, every cent counts to these organizations. And they’ve both shown that they can make the cents count!!! Donate at the event, click the link below or we’ve made it convenient for you to even donate when you book your reservation…

 

Food for thought...

This week we’ll be featuring fresh produce from Star Route Farms, Wild Nettles, Chard, Escarole and Pan di Zucchero. Seems like we’re going to once again get a nod from LA about our humble uniqueness. LA Times “JG” spent a good hour on the phone chatting with me about what makes us tick, thump and rattle. If it hits as scheduled, I’ll post it to the site and send another email out with a link to the story...

Well, I just finished getting off the line with our newest vendor “Niman Ranch”. And they are sending out some Lamb Cheeks, Sweetbreads and tasty Pig Trotters and Ears... Oh, my… So going to be a throw down this weekend. Looks like we’re going to take advantage of the last of the local Halibut before its gone and of course those of you that got the opportunity to dine with us this past week, know that we’ll be working with east and west coast oysters, yummy local chards, wild nettles and maybe a little Sugar Pie Pumpkins.

Here we go into the abyss of Halloween… Who are you going to become, what alter ego lurks beneath the Vanier of your everyday existence? Pumpkin of course. We’ve been promised some tasting items from our farmer’s this week. Cauliflower Leaves from Ella Bella Farms, Hachiya Persimmons for Cookies, and Wild Greens Ravioli with Pumpkin Nage from Knoll Organics, Wild Nettles, Porcinis, Washington Chanterelles, Pomegranates and tasty Apples will all make it in to this weeks Menu Tastings…. Oh and don’t forget about the PORK BELLY….

 

The News Blah Blah Blah Section….

We’re in the midst of making yet more significant upgrades to our services and options that we can offer to you our loyalist...

1st We’ve added several new locations in our San Francisco arsenal that will allow us to have more seating, and expand our Lounge options. This week we will debut the Glounge. A very cool, low-fi lounge, dark woods, chill lighting, HiDef video display, cool mix tunes, soft couches and little nooks to get your mustard flowin..

2nd  Several other new locations booked for this coming month, we’ll be offering in addition to regular dining seating, alfresco dining (tented of course) and possibly in the future some live music (looking for a pianist, and some jazzy musicians, anyone?)

3rd We’ve streamlined the system for reservations and donations. Those of you have been vetted (you know who you are), have the option to receive the direct link weekly and its even easier now to go through the system if your not.

4th We’ve added a “BLOG” to the site; we welcome your comments, experiences and discussions. Check in to see what the Chef’s Ranting and the Rogue Staff’s yammering about. This will include regular musings, and our news section has been moved to allow us to repost these messages for your convenience.

 

 We’re very excited about all of these improvements and have worked hard to create unique and special spaces to match the level of our food and service. Please come and check out the tasty bits we’ve set on fire…

Well, here we are.. the SCD SIX MONTH ANNIVERSARY...

For those of you "in the know of communication". Look for a special invitation in the weekly communiqué this week..

I'm at the desk working hard on the site to update the listings, pictures and menus to keep you all up to date.

We've got a couple of new events coming up in the following weeks, and would love you all to take note and lend your support.

For example: our new “Industry Night”, hosted by Ronin.. The details can be found Here…

First and foremost, I need to tell you all something that I feel is important. I have had a moment of clarity, a realization I'd like to say. About why the SCD exist, why it came to be, and what its goals and purpose truly is.

So you know the story…  SCD is a result of lets say, frustration and survival. Frustration with a series of issues and complications (primarily fundraising) that has been the process of creating our "bricks and mortar" program, NoCa.

NoCa  is a concept born of love and growth. Mine. It will be the culmination of my career to date; I've poured more than my heart, soul and finance into it up this point. I've never wavered, yes, I struggle day to day with the process, the disappointments and the broken promises, but I believe in the project, the people that have and are supporting it and more than anything... I believe in doing this for you. For some insane reason, I live to be of service, to do my culinary art for any that will sit still long enough for me to cut it, cook it, or just throw it on the plate, in the way only I know how.

I think the fortunate aspect of this process, is that we get to expose everyone to what our direction and philosophy in dining and cuisine are, as well as the opportunity for us to gel as a team that will bring a great level of personal service and attention to NoCa. So to say, NoCa is the goal that we seek, spreading the Underground philosophy and operating in our pirate style is part of the process.

Help us to grow, to attain our goals and give us the opportunity to put fire to the culinary rEvolution. Support us, allow us to continue to feed and delight you.

It"s been a hot and warm start to our summer season. We're looking forward with dread and excitment to the coming weeks and months.. It's not like I can't leave a good thing alone.. I've been constantly working on improvements and purchasing new and better equipment and service ware to make what we do better, more efficent and thrilling for all of you.

LA is coming up and the Ronin's are gearing up, pumping up with the idea of making a statement. This will be a first trip for most of the team and they want to make sure that LA has a clear understanding of who the SCD is and what we represent. I know that they'll make me proud and bring great excitment and SFstyle to all who come to see us. Reservations are starting to line up  nicely, Friday is almost booked and Tuesday is already sold out. Hurry up already..

This past week we were visited by a LA TV Producer with the thought of turning our lives in to a show. I want to thank everyone that participated in this new development and thank all of our guest this week for allowing the cameras to catch them in the "act"... And to all, my promise, my mantra.. You are my first priority. Without you, I have no one to serve, no one to cook for, no one to share my art with.. I appreciate you, and will always work my hardest to bring you my best, care for you needs and protect your privacy.

Sorry folks for not blogging more,

But,

we've had a couple of busy weeks and a lot of preparation for the upcoming newspaper article and the launch of Version 2.0...

I'm happy to announce the beta test of this great evolution of the S.C.D.'s culinary revolution.. (oh that rhymed.. nice).. This Thursday evening in San Francisco.

This is how its gonna work...

When we do a 2.0 evening.. (which will be clearly marked on the websites "dates & seatings" link), You will have several fantastic NEW options to dine with us.

the first being an adjustment to our seatings. We will still have the formal 2 seatings at 6:30 and 9:30, which we will now offer 2 price points.

A  7 course, $120.00 meal with a wine tasting

or a $65.00, 3 course meal without wine or $80.00, 3 course meal with the wine tasting..

Our newest option is the Small Bites Lounge.

We're offering open times and limited seating  to our Lounge area's (depending on the size and shape of the space, seating will be limited and first come- first serve)  for a wonderful menu of small bites, a special selection cocktail and wine list. (The minimuim for each Lounge seat is $50.00) We'll be projecting HD classics, possibly even live music, who knows..

I highly suggest you make reservations for space now.. The impending LA Times article is going to make it real difficult to get a seat real soon (june 18th).. hahahahhahaha

Hello Loyalist..

Great weather we're having.. Looking forward to the coming week.. After a bit of careful consideration and dealing with this past weekends insanity. We've had to make a few changes to the way it works.. Please check the "How it works"  page for the yada yada yada... To explain why. We don't ever have a problem accomidating individuals with special dietary restrictions or needs, we've simply found that the cost structure changes how we are able to provide for all and we don't want to short cut or dissappoint anyone. We do this for a reason, and if we can't do it right.... well... you can understand.. Thanks for your understanding and loyal support..

We're happy to have had our first back to back dinner guest at multiple locations.. You 2 kittens know who you are.. Bravo.. and we'll be seeing you on Thursday and hopefully Friday.. How were those skybox seats...

Well, its been a long week of preperation and insanity getting the S.C.D. to its new level of execution. Seasons are changing and great products are starting to show up in market, to say the least, I'm excited... This is the reason I've started this... I get to cook great stuff for you. The freshest and brightest the market has to offer each day... oh yea... I do have to applogize to the LA crowd. Demand has grown here and packing up and moving the show to LA right now is just not in the plan. I haven't forgotten about you. It's a priority, just not this month. I'm brewing up some incredible things for the following months, and having a real time keeping a lid on it... Soon... oh Soon.. A last note. Please realize that our Ronin are working hard for you as well and do appreciate your gratuities.. Please remember to show them your appreciation in the future..

Well, to say the least or most.. Things have been going quite well. The meals have been incredible. The guest have been amazing, The staff have been rockstars one and all.. Things are changing, evolving, growing.. Now is the time to have your experience before all bedlam breaks out.. I've got several major items in the works that may break the revolution out bigtime.. Anarchy.... and you'll have to listen to me tell you.. "I told you to get your spot a long time ago, now see!"

Just wanted to say thanks to those that participated in the offical FIRST Sub Culture Dining Event..

To say the least, I feel it was a success. Every one ate, chatted, enjoyed and discovered the Third Wave Evolution in Dining.. I'm assured that this is just a small glimpse of what fun and insanity that is to come. The seasons are changing, new vendor relationships are being started, which translates to better availablity to the freshest and most cutting edge product available to our Pirate faction..

How wet is it out there.. Well, it's good news for the mushroom foragers. Which ultimately means it will be great for the upcoming April 6th and 7th dinner. I've already brought in Black Oregon Tuffles for the event and saw some great fresh Halibut.. I've also gotten word that Chattam Haddock is running again.. So who knows what I'll be throwing down on the table by weeks end.. Oh yum..... DC
